On many a winter night, freshly steamed Sticky Toffee Pudding Ice Cream gives warmth; but, my wife's love of this dish seems to be year-round. Although I would rather have my sticky toffee pudding presented with a rather large dab of cornish clotted cream, a nice scoup of vanilla ice cream looks great. This summer, in helping my wife satisfy her needs, it occurred to me that maybe ice cream and pudding could be combined to create a summery twist of a wintery classic: sticky toffee pudding ice cream.

Sticky Toffee Pudding Ice Cream

Rich and moreish this ice cream is when you mix sticky dates with a delectable toffee sauce. A slosh of lemon slices through the sweetener. Let me say, my wife approved.

This call for a food processor and an ice cream maker. To take this to another level, bake some Sticky Toffee Pudding Ice Cream and stack it into the ice cream tub during ice cream decant. If you taste the custard before churning, don't panic if it tastes quite sweet; once frozen, it will be far less sugary.

Roughly cut the dates, then set them to the side to soften just covered by boiling water.

What is sticky toffee pudding made of?

  1. In a saucepan, mix the muscovado sugar, butter and lemon juice over low heat until the butter melts and the sugar has totally dissolved.
  2. Heat the milk and cream on a medium heat in another big pot until a moderate simmer results.
  3. Whisk the egg yolks and sugar together in a large mixing bowl while the milk and cream are warming; then, pour the hot milk and cream over the egg yolks stirring continually as you do.
  4. Rinse your saucepan quickly; then, put the egg and milk mixture back on the pan and simmer, stirring frequently, until thick enough to coat the back of a spoon. It should have velvety thickness.
  5. Take off the heat after the mixture has the right consistency. Blitz the dates into a purée in a food processor; then, fold them into the butter and sugar mixture before blending both into the ice cream custard. Pour back into the earlier mixing bowl once completely blended.
  6. Allow the mixture to chill totally. Once cold, churn in an ice cream maker as directed by makers.
Decant the ice cream into a tub and either preserve fresh in your freezer for another occasion or enjoy straight away.
